Shortcake’s Old-Fashioned Goat’s Milk Pancakes
makes 6-8 servings
1 1/2 cups all-purpose flour
3 1/2 tsp. baking powder
1 tsp. salt
1 Tbsp. sugar or honey
1 1/2 cups soured fresh goat milk
3 Tbsp. butter, melted
In a large bowl, sift together the flour, baking powder, salt and sugar. Combine milk, egg and melted butter; mix until smooth.
Heat a lightly buttered griddle or skillet over medium-high heat. Spoon the batter onto the griddle, using approximately 1/4 cup for each pancake. When air bubbles form and pop on the surface flip. Brown on both sides and serve hot. Add syrup, fruit, and whipped cream as desired to top.
Batter and/or cooked pancakes may be frozen for future use.
